Collard Green Wraps are my favorite! Collard greens are nice and sturdy so they make a fabulous faux 'tortilla', which can be loaded anything you want! I filled mine with basil hummus, cucumber, zucchini, carrot, mushrooms & sprouts.
- Firm Tofu
- Garbanzo beans
- Fresh Basil Leaves
- Frozen Peas
- Lemon juice
1. Blend all of the hummus ingredients in a high speed blender or food processor. The tofu makes it creamy without adding a lot of fat like tahini & nuts do. The frozen peas adds protein & adds to the nice green color.
2. Thinly slice the veggies with a mandolin slicer.
3. Spread the hummus on the collard green and then load in those veggies!
4. Wrap it as you would wrap a burrito.
