Massaged Kale, Arugula, and Roasted Cauliflower Salad

On Sunday my mom came home from the farmers market with a bunch of fresh veggies so everything in this salad is local and organic, except for the kalamata olives! 

Ingredients

  • 1 head of lacinato kale
  • fresh arugula (the best!!)
  • 1 cup of red cabbage 
  • 2 carrots
  • 1 avocado
  • 2 lemons 
  • half a head of cauliflower 
  • daikon radish 
  • kalamata olives 
  • turmeric powder
  • onion powder
  • cayenne powder
  • himalayan sea salt 
  • pepper 

Directions

  1. Preheat the oven to 400F.
  2. Wash and slice the cauliflower, then rub it with turmeric, onion powder, cayenne powder, sea salt, and lemon juice. Roast it in the oven for approximately 35 minutes, it should look golden brown when it is finished.  
  3. While the cauliflower is roasting wash and chop all of the other veggies. 
  4. Massage the kale with half of the avocado, lemon juice, salt and pepper. 
  5. Combine everything together in your bowl and enjoy!
